Spanish Brown Rice and Beans
The beans are optional, but they’re much better together.
Prep time: 5 minutes
Cook time: 55 minutes
Yield: about 7 cups of rice and beans
Ingredients 2 cups uncooked brown rice 8 oz. tomato sauce 6 stems cilantro 1 tsp salt 4 cloves of garlic 4 cups of vegetable broth 1 tsp cumin 1 tsp pepper 3 ~16 oz. cans of beans, any kind without additives Equipment a 5 quart pot with lid a kitchen knife a cutting board a strainer Instructions Wash brown rice in the strainer.

Cream of Mushroom Soup
He didn’t used to like cream of mushroom soup, but now he does - and it tastes even better with a baked potato!
Prep time: 10 minutes
Cook time: 35 minutes
Yield: 5-6 bowls
Ingredients 2 onions 6 large cloves of garlic 1.5 lbs. fresh brown mushrooms 4 teaspoons thyme 1/2 cup of dry red or white wine both 3-5 tbsp arrowroot powder 2-3 tbsp cold water both either 4 tbsp Seitenbacher (powdered) vegetable broth and seasoning 2 bullion cubes 4 cups water either 2 tbsp Seitenbacher (powdered) vegetable broth and seasoning 2 bullion cubes 1-2 tsp salt to taste 1/2-1 tsp cracked black pepper to taste 1 13.

Mangorita
It’s like a mango slushie, but it gets you buzzed.
Prep time: 5 minutes
Yield: 2 large drinks
Ingredients 2 jigger tequila 1 ounces cointreau 2 jigger lime juice 3/4 cup pineapple chunks 1 cup frozen mango chunks 3 cups ice Equipment a blender Instructions Put all ingredients in the blender. Blend on medium high until smooth.

Savory Cream Cheese Dip
Dill is good. Cream cheese is good. Sour cream is good. This dip is good.

Yield: enough dip for a bag of chips
Ingredients 12 oz. cream cheese 2/3 cup sour cream 1 tbsp dill 4 tbsp chives 1/8 tsp cayenne pepper 1/2 tsp black pepper 1 tsp sea salt 1 tbsp lemon juice zest of 1 lemon Equipment 1 medium mixing bowl 1 mixing utensil (spoon or fork works fine) Instructions Mix everything together.

Cinnamon Bread
We have to force ourselves to not eat the whole batch as soon as it comes out of the oven because it gets even better and denser after letting it cool overnight.
